Since its debut in 2021, Sauvage has been our boldest and most untamed release, showcasing the spirit of adventure in every bottle. Crafted from 100% Black Spanish grapes, these were hand-picked in the early morning hours at a picturesque vineyard nestled in Bertram, Texas just 90 minutes from Austin. The grapes undergo semi-carbonic maceration and are wild-fermented with minimal intervention, then lightly aged in stainless steel tanks to preserve their fresh, vibrant character.
Our aim is simple: to create a young, juicy, and wildly expressive wine that’s perfect for chilling and guaranteed to excite your taste buds. The label, designed by Saint No, offers a playful nod to the founders, Christian and Dominic, capturing the essence of their creativity and passion.
With just 66 cases produced, this is a rare and special release.
