Our Rosé is a blend of 61% Vermentino from Salt Lick Vineyards and 39% Cabernet Sauvignon Rosé from One Elm Vineyards, bringing together two distinct expressions of Texas fruit. Vermentino contributes bright acidity, citrus lift, and a subtle saline quality, while Cabernet Sauvignon adds delicate berry fruit, texture, and a beautiful blush hue. The result is a fresh, layered rosé that balances vibrancy with complexity.
This wine was crafted using the saignée (pronounced son-yay) method, a traditional French technique in which a portion of juice is "bled" from red grape fermentations after only a short period of skin contact. The juice is then fermented separately as rosé. This method creates wines with greater concentration, texture, and aromatic intensity than many direct-press rosés while also enhancing the remaining red wine.
On the nose and palate, expect aromas of white strawberries, Asian pear, and soft Mediterranean herbs. Crisp acidity carries the wine through a clean, refreshing finish, making it equally enjoyable on a hot Texas afternoon or alongside a meal.
Pair it with grilled shrimp, fresh summer salads, goat cheese, charcuterie, roasted vegetables, or simply enjoy it well chilled with good company. Like many of our wines, this rosé is made with a low-intervention philosophy, allowing the character of the vineyards and vintage to shine through with minimal manipulation.
