13% Vermentino - One Elm Vineyards

Fermented on Sauvignon Blanc Skins & Muskat Skins - Reddy Vineyards

Appearance: Clear, orange hue with yellow highlights and reflecting extended skin contact.

Nose: Fresh and aromatic, opening with salted nectarine, peach tea, and bright citrus peel, followed by savory notes of sage, spearmint, and delicate floral undertones. Subtle hints of dried herbs and stone fruit.

Palate: Vibrant, showcasing ripe nectarine, peach skin, and citrus zest balanced by a saline edge and herbal lift. Gentle tannins from skin fermentation provide structure, while lively acidity keeps the wine energetic. The finish lingers with notes of peach tea, minerality, and cooling mint.

Vineyard & Craftsmanship: Crafted from a blend of 55% Albariño, 32% Viognier, and 13% Vermentino, this wine was fermented on Sauvignon Blanc and Muskat skins to build aromatic complexity, texture, and depth. Careful aging in neutral vessels preserves freshness while allowing the wine’s savory and floral elements to integrate harmoniously.

Pairing Suggestions: Excellent alongside Mediterranean and coastal cuisine, including grilled octopus, herb-roasted chicken, saffron rice, fresh chèvre, and citrus-marinated seafood. Its savory texture and saline character also complement olive-forward dishes, pork, and lightly spiced vegetable preparations.

Aging Potential: Enjoy now for its vibrant aromatics and energetic freshness, or cellar for 4–6 years as its savory, textural qualities continue to evolve.

Acqua Pazza. Crazy water. Crazy good.
