We got this slammer in bottle just in time for Beaujolais Nouveau day. Made from Mourvèdre, the use of carbonic maceration yielded a lighter red expression of the variety. Dominic and Christian hand-picked and sorted this fruit with the help of the picking crew at Salt Lick on August 17th. After 2 weeks under gas, it was crushed and pressed into stainless steel tank, where it finished fermentation and chilled out til it was ready to bottle (about 5 weeks, very fast turn around).
The label, put together by our friend Kat Cadena, was inspired by 21 Savage's "Issa" album cover, drawing parallels and reflections of the wild wine in the bottle. Sauvage is a french term meaning wild, natural, or savage. This is 100% glou glou.
