Winemaking notes: Yeast added, unfiltered, native malo, ~30ppm SO2 at canning. 6.0 g/l TA, 3.47pH. 11.5% alc. Saignée of Cinsaut, aged in stainless. Direct-press Viognier, aged in egg. Force-carbed in tank.
