This wine, formerly called Friends with Benefits, was typically a blend of Malvasia Bianca and Albariño - representing the symbiotic relationship between the crocodile and the Egyptian plover (the bird that cleans the croc's teeth). Alone, they are fine and dandy, but together they become greater than the sum of their parts, articulating a complexity that neither grape could on its own. But this year, the Malvasia does stand alone better! So chomp down! JK, but the wine is really delicious.
The Malvasia shows citrus and tropical components (guava, pineapple, orange peel). The skin contact allows this wine to have bit more body, a subtly soft meringue mouthfeel that softens the acid, gives a perception of sweetness that pairs well with spicy Thai dishes featuring fowl and shells.
