2020 85% Malvasia Bianca and 15% Albariño, aged on lees in stainless for 1yr, refermented with pressed 2021 Marsanne clusters, Nogalero and One Elm vineyards(High Plains) and Salt Lick (Hill Country), multi-vintage ripasso, papaya, lime zest, ginger, honey, saline, HIGH ACID.
The Marsanne skins were perfectly selected for this wine. The original blend was very high acid and frankly a little simple. In tasting through the grapes on the vine at Salt Lick, we at first considered more Alba, maybe some picpoul, even Viognier.... But Marsanne was immediately the right pick. Even on the vine, it was richer and whole mouth filling and soft. The perfect grape for the process and for the wine.
Acqua Pazza. Crazy water. Crazy good.
