Sparkling rosé. 55% Cinsaut + 45% Viognier. Bubbles in a 375ml can. 100% Texas High Plains fruit - dry, refreshing, and crisp!
Tasting notes are tart cherry, watermelon, orange peel, bitter almond.
Winemaking notes: Yeast added, unfiltered, native malo, ~30ppm SO2 at canning. 6.0 g/l TA, 3.47pH. 11.5% alc. Saignée of Cinsaut, aged in stainless. Direct-press Viognier, aged in egg. Force-carbed in tank.
